FOTO: MARIOARTURO MARTINEZ\/EL UNIVERSAL<\/figcaption><\/figure>\n<p>Uno de los platos m\u00e1s emblem\u00e1ticos es el <strong>mole de fiesta<\/strong>, una preparaci\u00f3n compleja basada en chiles secos, especias y semillas tostadas que se sirve en celebraciones comunitarias. A diferencia de otros moles oaxaque\u00f1os conocidos, el mole de Yalalag conserva un perfil m\u00e1s terroso y menos dulz\u00f3n, resultado del equilibrio entre ingredientes locales y procesos tradicionales.
